A half typically yields 400 pounds of hanging carcass weight (HCW) and 240 pounds of packaged meat.  A half will fill a 20-cubic-foot freezer. Our cut sheet allows you to specify exactly how your side of beef should be cut.

Our Custom Half is cut from a half side of beef that is first dry-aged 14 days in our butcher’s cooler. (Aging 21 days dry aging option is available for an additional charge).
