A whole steer typically yields 800 pounds of hanging carcass weight HCW and  480 pounds of packaged meat.  A whole share will fill two upright freezers. Our cut sheet allows you to specify exactly how you would like your two sides of beef cut.

Our Custom Whole is a whole steer that is first dry-aged 14 days in our butcher’s cooler. (Aging 21 days dry aging option is available for an additional charge.)
