Great steak doesn’t require complicated techniques. It requires great beef, the right tools, and a little respect for heat.

One of the best ways to do that is with a cast iron skillet.

Cast iron has been used in kitchens for generations because it holds heat exceptionally well. That heat retention allows the steak to develop the deep, caramelized crust that gives great steak its flavor. When the pan is hot enough, the surface of the beef quickly browns while the interior stays tender and juicy.

The process is simple.

Start by removing your steak from the refrigerator about 30–45 minutes before cooking. Letting the meat come closer to room temperature helps it cook more evenly.

Pat the steak dry with a paper towel and season it generously with salt and cracked pepper. Simple seasoning allows the quality of the beef to stand on its own.

Next, heat a cast iron skillet over medium-high heat until it’s very hot. Add a small amount of high-heat cooking fat, beef tallow, or avocado oil; both work well.

Once the oil begins to shimmer, place the steak in the pan.

You should hear an immediate, confident sizzle. That sound means the crust is beginning to form.

Let the steak cook undisturbed for about 2–3 minutes. Resist the temptation to move it around. The steak will naturally release from the pan when a proper crust develops.

Flip the steak and repeat on the other side.

If the steak is thick, you can finish it in a 400°F oven for several minutes until it reaches your desired doneness.

Finally, and this step is just as important as the cooking, let the steak rest for 5–10 minutes before slicing. Resting allows the juices to redistribute throughout the meat.

The result is a steak with a deep crust, a tender interior, and flavor that speaks for itself.
