Simple Iron Wood Chuck Roast Method

1.     Preheat oven to 325°F.

2.     Heat the Dutch oven on the stove with a small amount of oil or beef tallow.

3.     Season your Iron Wood chuck roast generously with salt and pepper.

4.     Sear the roast on all sides until deeply browned.

5.     Add onions, garlic, herbs, and beef stock or wine.

6.     Cover and braise in the oven 3–3½ hours until fork-tender.

The result: rich flavor, tender beef, and a sauce worth soaking up with fresh bread.
