When Durant’s 2020 Estate Grown Pinot Noir was touched by wildfire smoke, instead of letting it go to waste, the culinary team reimagined it—blending the fruit-forward notes of Pinot Noir with subtle smoky undertones to create a sauce unlike any other.

Developed by Culinary Director Chef Eric Bartle, this limited-edition sauce layers rich flavors of allspice, clove, smoked chipotle, and black pepper into a bold, balanced condiment. The result is both refined and rustic—a sauce that tells a story in every bite.

Perfect on Wagyu-Angus beef, it enhances the marbling and tenderness with a smoky-sweet finish that pairs beautifully with brisket, ribs, or flame-grilled steaks. Beyond beef, it shines on pork, charcoal-grilled salmon, roasted vegetables, and even earthy mushrooms.
