Each animal is processed at an inspected facility and dry-aged for 14 days in the butcher’s cooler, allowing the meat to naturally tenderize and develop deeper flavor.
This aging process enhances the beef's richness while creating the tenderness and character that define exceptional steaks and roasts.
Each Standard One Eighth share is cut from a half side of beef, with four shares produced from each side. The result is a versatile assortment of steaks, roasts, and ground beef, offering a wide range of options for cooking at home.
